500 fresh turkey mince (you will have to make your own after removing all fat)
2 iceberg lettuces
3 tbspn MCT Oil
2 tbspn fresh Ginger Grated
8 spring onions sliced
2 tbspn Soy Sauce
4 tbspn Hoi Sin Sauce
200g Tinned Water chestnuts roughly chopped
1/2 cup coriander leaves
Prepare the lettuce by removing the core with a sharp knife and any of the dark outer leaves.
Carefully uncurl the leaves to keep them in neat cups. Rinse in a large bowl of cold water before
allowing them to drain.
Heat the oil in a large non stick frying pan. Add the mince and cook until it is lightly golden. Add
the ginger, spring onions, soy sauce, hoi sin sauce and water chestnuts and cook for two minutes.
Stir in the coriander leaves at the last minute and spoon into the lettuce leaves.
