2 cup diced Cantaloupe
2 tbsn minced Red Bell Pepper
1 tbsn seeded, minced Jalapeno
1 tbsn minced cilantro
1 tbsn Rice Wine Vinegar

Combine all ingredients in a non-reactive bowl. Chill for 1 hour.
Serve with pork, chicken or fish.
