1 cup Pastry Flour
1/2 cup Brown Rice Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1 tspn Brown Sugar
1/2 cup Plain Yogurt
1 cup Water
1 Egg White
1 Banana, coarsely chopped
Dash of Nutmeg

Combine dry ingredients.  Beat egg white until frothy and whisk in the yogurt and water. Combine
wet and dry ingredients, mixing only until moistened, adding a bit more water if necessary.  Fold in
the banana pieces. Bake on a non-stick griddle (electric if possible) at about 375 degrees, turning
only once. Touch top, if it springs back they are done.
