500g lean chuck or round steak (all fat removed)
2 TBSPNS plain flour
1 TBSPN  MCT Oil
1  onion, sliced
1 clove garlic, crushed
3 tsp brown sugar
2 carrots, thickly sliced
2 bay leaves
3⁄4 cup chicken stock
11⁄4 cups water
3/4 cup Guinness beer
4 prunes, seeded and halved (optional)

Instructions
Cut steak into 2.5cm cubes and toss in flour. Heat oil in a small non-stick fry pan to medium. Add
onion and stir-fry for 2 minutes or until soft. Add beef and stir-fry for 2 more minutes or until lightly
browned.
Add garlic, sugar, carrot, bay leaves, stock, water and Guinness. Cover and cook over low heat
for 11/4 hours or until steak is tender and liquid has thickened. Stir often, adding extra water if
necessary.
If required add prunes and cook for a further 10 minutes.
